Pita & India



Well…I’d like to start off this post with a statement. A statement I have repeated to many over the span of 19 years that has been my life. It was my most popularly used statement in Spain where I was commonly mistaken to be from a million other places.
I am Indian.
There. I said it. And as an Indian living away from home I often have cravings. An insane craving for that extra spice or that unmistakable zest we Indians tend to add to our food (some call it bragging, I call it pride =D).  
Sure. I live in New York and I could order in Indian food from pretty much anywhere. But where’s the fun in picking up the phone and punching in a few numbers??
So when I found this recipe AND realized I only needed a microwave to make it… all was right with the world. =)
This recipe was taken from the “The well-filled microwave cookbook, available at our webstore Kollege Kitchen.
It’s not completely Indian, but it has all the right spices to make a kick-ass imitation.

Curried Chicken & Almond Pita Pockets


What you need…

1 cup diced chicken breasts
2 tablespoons minced onion

Curry powder to taste 
(as much as u like)
1/4 cup slivered almonds
1/4 apple, diced
1 tablespoon water
1/4 cup mayonnaise
1 teaspoon minced parsley
Salt and pepper to taste
1 pita cut in half 


What to do… 
In a dish (microwavable) large enough to hold the chicken, mix together the chicken, water, curry powder and almonds. 
Place in the microwave for 5 minutes on high (or until you think the chicken is done). Remove, drizzle the olive oil over it and let it stand.
Now in another bowl toss together the apples, mayonnaise, onions, parsley, salt and pepper.
Add this mixture to the cooked chicken and stir well. Now put this in the microwave for another 2 minutes.
While this cooks, you may toast or lightly heat the pita bread in an oven. Depends on whichever way you like it.
Remove the dish from the microwave after it’s done. Now fill each pita with the chicken mixture and add lettuce or tomatoes as you like.You can substitute cottage cheese or tofu for the chicken. 


And you’re all set to dive into your Pseudo-Indian/Mediterranean Fabulousness!
